Recipes
I enjoy the challenge of creating recipes that are as easy to cook as possible. They are not complicated or fancy but they do use ingredients in standard UK supermarket sizes and generate as little washing up as possible. Please let me know what you think if you cook one of them!
Sun dried tomato, feta and pesto couscous salad
This meal is particularly quick and easy, it might be simple but the ingredients last a long time in the cupboard/freezer and it tastes really good.Roasted chicken and vegetables with cheese sauce
Affectionately known as 'slop' because of its appearance; this recipe is very easy to make (especially if you use pre-chopped butternut squash) and the sauce is far tastier than it has any right to be.
Chicken and rice salad with satay sauce
While the chicken thighs cook you make the salad then everything comes together at the end when the pan is deglazed and the satay sauce tops it off.
Pea and chorizo orzo
An evolution from the original pea and chorizo pasta dish, this new version cooks everything in one pan for more flavour, an extra creamy sauce, shorter cooking time and less washing up!
Hummus and chorizo salad
An excellent meal to make if you want to practise your knife skills, the most complicated part of this is chopping everything small enough; even the dressing is just hummus.
Pea and chorizo pasta
One of my original and still favourite mid week recipes, the cream picks up the chorizo oil and coats the pasta for an easy sauce and everything is cooked in one saucepan.Rice cooker chorizo and tomato rice
This meal is cooked entirely in a rice cooker making it extremely easy to cook; a couple of hacks like chorizo and a good chipotle paste ensure it is full of flavour.
Chestnut and mushroom pasta
The sauce is made by blending half of the ingredients, making it rich without using any cream and very flavourful.
