
Hummus and chorizo salad
An excellent meal to make if you want to practise your knife skills, the most complicated part of this is chopping everything small enough; even the dressing is just hummus.

Ingredients

1 chorizo
-
400g hummus
-
2x 250g pre-cooked grains (I like Merchant Gourmet Persian style grains for this recipe)

3 medium tomatoes

half a cucumber
-
3 spring onions
-
30g fresh flat leaf parsley (coriander works as well)

freshly ground black pepper

salt to season
Method

Chop
Chop the chorizo, tomatoes, cucumber into half centimeter cubes, slices the spring onions and parsley, place in a large mixing bowl.

Reheat grains
Reheat the grains in a microwave according to packet instructions.

Combine and season
Put the grains in the mixing bowl, top with the hummus and mix, grind in fresh black pepper, season and serve.
